This is a yummy soup recipe that will please even the biggest meat eaters! Trust me, I tried it on my BIL and he loved it!
1 (sm. to med.) onion, diced
2 cloves garlic, minced (or use a press)
1 can chicken broth (or veggie)
1 can water (I fill up the broth can)
1 can red beans, rinsed and drained
1 can navy beans, rinsed and drained
1 (15 oz.) can tomato sauce
2 tablespoons dried parsley
1 tablespoon dried basil
1 tablespoon dried oregano
1/3 pound ditalini pasta
1 tablespoon olive oil
Salt and Pepper to taste
Parmesan cheese for garnish
Saute onions and garlic in olive oil about 2 minutes. Add all ingredients expect pasta, bring to a boil. Let it boil for about a minute and add pasta. Reduce heat and simmer about 20 minutes until pasta is cooked. Ladle and put fresh grated parmesan cheese on top.
This soup is so thick and rich it's just wonderful!
